Potted Clearwater Sunchoke

Species: Helianthus tuberosus, Sunchokes are also known as Jerusalem Artichokes or J Chokes

History: Little is known about the origins of Clearwater aside from the fact that it originated in Maine, possibly as a wild plant found in 1988.

Why We Grow It: Clearwater produces smooth, white tubers with a mild flavour that some say borders on sweet. This is a productive variety and the smoothness of the tubers generally makes them easier to clean. Sunchokes can be prepared and eaten in much the same way potatoes can, making them a very versatile food.

Recommended Use: Fresh eating, cooking, attracting pollinators

Storage: Keeps a few months when stored in cool, humid conditions

Soil Preferance: Prefer loose, well-drained, fertile soils that are slightly acidic but adaptable to most kinds of soils

Flowering Time: Summer - Late

Pollination Requirements:

Sun/Shade Requirements: Full sun to partial shade (approx. 6-10 hours of sun daily)

General Growth Habit: Plant reaches 11-12ft tall, productive. Not generally bothered by pests or diseases. Flowers late August to September. Harvest October to December, but best after one or two lights frosts.

Potted plants vary in size and age, but we typically pot berries and smaller seedlings in 1-3 gal pots and larger grafted trees in 5-16 gal pots.
