
Sea Buckthorn Juice Gummies

Sea Buckthorn berries can be juiced and made into wonderful, high-vitamin-C gummies for kids and adults alike. This recipe is a simple one that can be done using frozen or fresh berries.

I start by blending the berries (rather than mashing them up by hand) and straining them through a colander lined with cheesecloth, twisting the cloth to squeeze out as much juice as I can at the end. This dyes the cheesecloth a nice warm yellow tone too!
After I have the juice separated, I set aside a small amount to bloom my gelatin in, and bring the rest to a nice warm temperature (doesn't have to boil, but should be hot) in a saucepan. I add honey to taste at this point, ensuring it has dissolved in completely before whisking in my bloomed gelatin.

Once whisked, pour (or use a medicine dropper) into molds such as these cute little heart shaped ones. I like to put them on a tray ahead of time for easily moving them into the fridge to set up.
If you don't own molds you can also wait for it to start setting up a little bit and then pour onto a silicone baking mat with chopsticks (or similar) helping keep the sides raised slightly so that your gelatin mixture forms a smooth layer than can be cut into strips or whatever shape you want later on!
Place the molds/sheet pan into the fridge to set up completely. Usually you can have a taste after 30 minutes, but waiting a couple hours or overnight for full set-up makes them really easy to de-mold.
I use approximately:
- 1-2 TBSP gelatin per cup of juice; use more gelatin for firmer gummies and less if you like them quite soft (& keep in mind that the honey should also be treated as part of your liquid total)
- 1TBSP honey per cup of juice

For gelatin, I get mine from Organic Oasis, but any unflavoured gelatin of your choice will work for this recipe.
Have fun giving these to the kiddos in your life or just enjoy them for yourself - us adults deserve to feed our inner children gummies too!
These should be stored in the fridge and will keep well for several weeks. If you want them to keep for longer, you could experiment with drying them out longer in their molds or using a bit extra gelatin when mixing them up.
